Pistachio, Honey & Thyme Whipped Ricotta Toast

Fluffy whipped ricotta spread over your favourite toasted bread, topped with sweet and savoury lemon, thyme and honey dressing and crunchy pistachios. Ingredients (serves 2):

  • 3/4 cup whole milk ricotta cheese
  • 2 tablespoons honey
  • 2 teaspoons fresh thyme, finely chopped
  • 1 teaspoon lemon juice
  • 2 slices rustic bread, 1-inch thick, toasted
  • 1/4 cup shelled pistachios, chopped
  • Salt and freshly ground black pepper (optional)

Method:

  1. Infuse the honey: In a small bowl, whisk together honey, chopped thyme, and lemon juice. Let it sit while you prepare the other ingredients to let the flavours marinate.
  2. Whip the ricotta: Whisk ricotta in a food processor or by hand for 30 seconds to 1 minute until light and fluffy.
  3. Toast the bread: Toast your rustic bread slices until golden and crisp.
  4. Assemble the toast: Spread a generous layer of whipped ricotta on each slice of toasted bread.
  5. Add toppings: Sprinkle with chopped pistachios and drizzle with the lemon, thyme and honey dressing. Finish with a light pinch of salt and pepper if desired.
  6. Serve immediately and enjoy!

Tips & Variations:

  • Use different honey flavours (orange blossom, wildflower, or hot honey) for unique twists.
  • Substitute fresh thyme with rosemary or basil if preferred.
  • Make the whipped ricotta and honey mixture ahead of time and store it in the fridge for up to 3 days. Assemble just before serving.
  • For party-friendly bites, use small baguette slices instead of thick toast.
