Nothing says summer quite like strawberries and cream. These homemade strawberry ice cream cookie sandwiches are the perfect treat to enjoy while watching Wimbledon in the sunshine.

Creamy homemade strawberry ice cream is sandwiched between two buttery cookies, then finished with fresh strawberries and mint. It's an easy dessert that's perfect for garden parties, picnics, or a relaxing afternoon of tennis.

Ingredients

  • 300g fresh strawberries, hulled
  • 75g caster sugar, plus 1 tbsp
  • 250ml double cream
  • 150ml whole milk
  • 1 tsp vanilla extract
  • Pinch of salt
  • 1 tsp lemon juice (optional)
  • 8 buttery cookies
  • Fresh strawberries, sliced
  • Fresh mint leaves

Instructions

Mix the strawberries with 1 tablespoon of caster sugar and leave for 15 to 20 minutes until juicy.

Blend the strawberries until smooth.

Whisk together the cream, milk, remaining sugar, vanilla extract, salt, and lemon juice until the sugar has dissolved.

Stir in the strawberry purée and pour the mixture into the ice cream maker. Churn until thick and creamy, around 45 to 60 minutes.

Scoop the strawberry ice cream onto one cookie and sandwich with another.

Finish with sliced fresh strawberries and fresh mint before serving.
