Slow Cooker Tender Beef with Vegetables

Looking for an easy, hearty meal with zero effort? This slow cooker beef recipe delivers fall-apart tenderness and rich flavour, all while you get on with your day. Packed with wholesome vegetables and cooked low and slow in the Haden 6.5L Slow Cooker, it’s a no-fuss classic the whole family will love.

Ingredients:

  • 1.2–1.5kg beef chuck or brisket
  • 4 carrots, peeled and chopped
  • 6 baby potatoes, halved
  • 1 large onion, cut into chunks
  • 3 cloves garlic, minced
  • 500ml beef stock
  • 2 tbsp tomato paste
  • 2 tbsp Worcestershire sauce
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • Fresh thyme for garnish (optional)

Instructions:
1. Prep the Beef:
Season the beef generously with salt and pepper. Sear in a hot pan for a few minutes on each side to lock in flavour (optional, but recommended).

2. Add to Slow Cooker:
Place carrots, potatoes, and onion in the base of your slow cooker. Place the beef on top. Add garlic, beef stock, tomato paste, Worcestershire sauce, and thyme.

3. Cook Low and Slow:
Cover and cook on low for 8 hours or until the beef is fork-tender and vegetables are soft. We used the Haden 6.5L Slow Cooker, which fits everything perfectly and cooks evenly throughout.

4. Serve:
Slice or shred the beef, spoon over the juices, and serve with the cooked veg. Top with fresh thyme if you like.
