Herby Cottage Cheese Toast With Air Fryer Roasted Tomatoes

This simple yet flavour-packed recipe brings together the best of the season - ripe tomatoes, fragrant garlic, and fresh chives for a vibrant brunch idea, an easy lunch, or a no-fuss supper. Ingredients

  • 500g summer tomatoes
  • 1/4 cup olive oil
  • 2 cloves garlic
  • 3 slices of bread
  • Salt and pepper, to taste
  • 300g cottage cheese
  • 20g (about 3 bunches) chives, finely sliced

Instructions

  1. Wash the tomatoes and slice one clove of garlic.
  2. Place the tomatoes and sliced garlic in a roasting dish. Drizzle with olive oil and season with salt and pepper.
  3. Roast the tomatoes:
    Air Fryer: Set to 160°C and roast for 15–20 minutes (no need to preheat).
    Oven: Preheat to 180°C and roast for 20 minutes.
  4. Toast the bread slices and rub each with the remaining garlic clove.
  5. Slice the chives, keeping some for garnish. Mix the rest with cottage cheese, seasoning with salt and pepper.
  6. Place the toast on a plate and drizzle with the tomato olive oil.
  7. Spoon the cottage cheese mixture onto each slice.
  8. Top with roasted tomatoes, their roasting juices, and garlic.
  9. Garnish with the reserved chives. Serve immediately and enjoy!
