Herby Cottage Cheese Toast With Air Fryer Roasted Tomatoes

This simple yet flavour-packed recipe brings together the best of the season - ripe tomatoes, fragrant garlic, and fresh chives for a vibrant brunch idea, an easy lunch, or a no-fuss supper. Ingredients
- 500g summer tomatoes
- 1/4 cup olive oil
- 2 cloves garlic
- 3 slices of bread
- Salt and pepper, to taste
- 300g cottage cheese
- 20g (about 3 bunches) chives, finely sliced
Instructions
- Wash the tomatoes and slice one clove of garlic.
- Place the tomatoes and sliced garlic in a roasting dish. Drizzle with olive oil and season with salt and pepper.
- Roast the tomatoes:
Air Fryer: Set to 160°C and roast for 15–20 minutes (no need to preheat).
Oven: Preheat to 180°C and roast for 20 minutes. - Toast the bread slices and rub each with the remaining garlic clove.
- Slice the chives, keeping some for garnish. Mix the rest with cottage cheese, seasoning with salt and pepper.
- Place the toast on a plate and drizzle with the tomato olive oil.
- Spoon the cottage cheese mixture onto each slice.
- Top with roasted tomatoes, their roasting juices, and garlic.
- Garnish with the reserved chives. Serve immediately and enjoy!
