Burrata, Pastrami & Avocado Sourdough Toast

Try something new on toast - this simple idea is ready in 5 minutes and elevates the usual avocado on toast for a brilliant brunch, lunch or snack. Crispy sourdough topped with creamy burrata, savoury pastrami (vegan or regular), and finished with fresh avocado - it's indulgent, easy and a recipe you'll try once and be craving every week.

Ingredients (serves 1):

  • 1 slice of sourdough bread
  • 1 tsp olive oil
  • 1 garlic clove
  • 1 ball of burrata cheese
  • 2–3 slices vegan pastrami (or regular pastrami if you prefer)
  • ½ avocado, sliced
  • Salt and freshly ground black pepper, to taste

Method:

  1. Brush the sourdough slice lightly with olive oil and toast until crispy and golden.
  2. Once toasted, rub the cut side of the garlic over the warm bread for a subtle garlicky flavour.
  3. Tear open the burrata and spread it evenly over the sourdough.
  4. Layer the pastrami slices on top of the burrata.
  5. Arrange the avocado slices over the pastrami and season with salt and pepper.
  6. Serve immediately and enjoy!

Tips:

  • For a vegan version, stick to vegan burrata and vegan pastrami.
  • Add a drizzle of olive oil or balsamic glaze for an extra touch of flavour.
