Loaded Air Fryer Cheesy Sweet Potatoes with Herb Butter

Soft on the inside, slightly crisp on the outside, and finished with melted cheese and fresh herbs. These air fryer sweet potatoes are simple but feel like comfort food done properly. The butter melts into the centre, the cheese goes golden, and the dill brings freshness at the end.

Ingredients (serves 2)

2 medium sweet potatoes
2 tablespoons olive oil
Salt, to taste
Black pepper, to taste
2 tablespoons butter
Handful of grated cheese (cheddar or mozzarella works well)
1–2 teaspoons fresh dill, chopped

Method

Prepare the sweet potatoes
Wash the sweet potatoes thoroughly.
Use a fork to poke holes all over each sweet potato.

Season
Rub each sweet potato with olive oil and a pinch of salt.

Air fry first, bake
Place in the air fryer at 200°C and cook for 25 minutes, or until soft when pierced with a knife.

Open and load
Carefully slice each sweet potato open down the middle.
Add butter into the centre so it melts into the flesh.

Add cheese
Sprinkle a generous amount of cheese on top of each sweet potato.

Final bake
Return to the air fryer for another 5 minutes at 200°C until the cheese is melted and slightly golden.

Finish and serve
Season with salt and black pepper.
Sprinkle with fresh chopped dill and serve warm.
