- 2 cups cooked risotto, cooled
- 1/2 cup mozzarella cheese, cut into small cubes
- 1/2 cup flour
- 2 eggs, beaten
- 1 cup breadcrumbs

Prepare the Arancini: Take a small amount of risotto and form a ball around a cube of mozzarella cheese. Repeat until all the risotto is used.
