Stuffed peppers are a vibrant, nutritious, and delicious option for a summer meal. Using the Haden air fryer, you can whip up this classic dish quickly and effortlessly. Here's a simple recipe to brighten up your summer dining:

Ingredients:

  • 4 bell peppers, tops cut off and seeds removed
  • 1 lb ground turkey or beef
  • 1 cup cooked quinoa or rice
  • 1 can black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup shredded cheese
  • 1 can diced tomatoes
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Method:

  1. Prepare Filling: In a skillet, cook ground turkey or beef over medium heat until browned. Add chopped onion and garlic, cooking until soft. Stir in cooked quinoa or rice, black beans, corn, diced tomatoes, chili powder, cumin, salt, and pepper. Mix well and let it simmer for 5 minutes.
  2. Stuff Peppers: Fill each bell pepper with the prepared mixture. Top with shredded cheese.
  3. Air Fry: Preheat the Haden air fryer to 180°C. Place stuffed peppers in the air fryer basket and cook for 10-12 minutes, until peppers are tender and cheese is melted and bubbly.
