Do you have some ripe bananas? Don’t throw them away, save them for these yummy & healthy Paleo Banana Bread Muffins. 

We made them in our Air-Fryer, but you can use your oven too. These muffins are super easy to make! They are gluten free, dairy free & grain free, a perfect healthy & sweet treat!

INGREDIENTS

3 ripe bananas
1 cup of ground almonds
1 egg
1 cup of walnuts
½ cup of melted coconut oil
1 Tsp of honey or maple syrup
1 Tsp of vanilla extract
½ Tsp of baking soda
a pinch of salt


METHOD

1, Mash 2 ripe bananas in a large mixing bowl & whisk in the egg.
2, Add the coconut oil, honey or maple syrup, vanilla extract, ground almonds, baking soda & salt.
3, Chop the walnuts into pieces & mix them in the dough. Save some for decorating the muffins.
4, Mix everything together until well combined.
5, Fill the muffin cases & decorate them with remaining sliced banana & walnuts.
6, Set the air-fryer or heat the oven to 180C & air-fry or bake for 12 mins or until a skewer inserted into one of the muffins comes out clean.
7, Enjoy!
