This comforting & healthy lentil soup is done in just 15 minutes & it is packed with healthy lentils, carrots, celery & potatoes.

The beauty of cooking this soup in a pressure cooker is that you don’t need to soak the lentils overnight. What’s more, the pressurised steam locks in more vitamins & minerals for a much healthier meal than stove top cooking.

INGREDIENTS

1-2 tsp Olive Oil
Red or Yellow Onion (finely chopped)
2 Carrots
3-4 Stalks of Celery
2 medium Potatoes
1 1/2 cups Green or Brown Lentils
1 can Chopped Tomatoes
4 cups Vegetable Broth
Season to taste with Salt, Pepper, Smoked Paprika, Chilli Powder (optional)


METHOD

1, Set the Kitchen Angel to Sauté function.
2, Heat the olive oil, add the onions. Sauté for 2-3 minutes.
3, Add carrots, celery, potatoes, lentils & chopped tomatoes.
4, Pour in the broth & add the seasonings. Stir until well combined.
5, Seal the lid & turn the steam release handle to the Sealing position.
6, Set to cook on HIGH pressure for 15 minutes. It will take about 4 minutes for the pressure to build, then the timer will begin.
7, Once the timer has stopped, carefully vent to release the pressure completely.
8, Carefully open the lid once the pressure is released.
9, Taste & adjust the seasoning as desired.
10, Serve & enjoy!
