Refreshing Watermelon Salad Recipe

Sweet, salty, and zesty, this salad is bursting with flavour. Ideal for Summer days, it can also be made all year long to accompany grilled food.

  • Prep time: 10 -15 minutes
  • Cooking time: 5 minutes

Serving:  3 – 4 servings

Ingredients:

For the salad:

  • 1 half of seedless watermelon - cut into cubes
  • 1 medium English cucumber - cut into cubes
  • 120g fresh feta cheese
  • 10g torn mint

For the vinaigrette:

  • 1/4 c. extra-virgin olive oil
  • 2 tbsp. maple syrup
  • 1 tbsp. lime juice
  • Sea salt and pepper to taste

 Method:

Step 1: Place the watermelon, cucumber, and mint in a large bowl.

Step 2: In a small bowl, whisk together the olive oil, maple syrup, lime juice, salt and pepper. Drizzle half of the vinaigrette over the salad mixture and toss to coat.

Step3: Top it up with crumbled feta, and drizzle with the remaining dressing. Garnish with mint and flaky sea salt.

Serve this quintessential summer salad immediately to enjoy its freshness.
