Sweet, salty, and zesty, this salad is bursting with flavour. Ideal for Summer days, it can also be made all year long to accompany grilled food.

Serving: 3 – 4 servings
For the salad:
- 1 half of seedless watermelon - cut into cubes
- 1 medium English cucumber - cut into cubes
- 120g fresh feta cheese
- 10g torn mint
For the vinaigrette:
- 1/4 c. extra-virgin olive oil
- 2 tbsp. maple syrup
- 1 tbsp. lime juice
- Sea salt and pepper to taste
Step 1: Place the watermelon, cucumber, and mint in a large bowl.
Step 2: In a small bowl, whisk together the olive oil, maple syrup, lime juice, salt and pepper. Drizzle half of the vinaigrette over the salad mixture and toss to coat.
Step3: Top it up with crumbled feta, and drizzle with the remaining dressing. Garnish with mint and flaky sea salt.
